COUSIN CLEAVON'S REDNECK COOKING: Delicious Date Cookies

I have recently had a mining accident and hit my head. I am starting to feel normal, which is unlike me, so I felt like writing my best edible recipe.

INGREDIENTS:

2 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

8 oz. cream cheese, room temp

1 ½ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

Date filling:

25 dates without pits

2 teaspoon of lime juice

¼ granulated sugar

DIRECTIONS:

Mix the wet ingredients in the mixing bowl and then add the flour, baking powder and sugar. Once to a dough consistency, put in the refrigerator for a night.

When you are ready make the filling. Boil the dates in enough water to cover and ¼ cup of sugar for three minutes. Then let it cool down.

Drain the water from the dates and use an emulsion blender to turn the dates into a paste. Add the lime juice as you were doing this.

Once you have the filling made. Roll out the dough and cut into 2" rounds with a cookie cutter. You will make little pasties with the filling.

Bake at 350F for 16 minutes or until golden brown.
